Soybean

Soybean oil is a vegetable oil derived from the seeds of the soybean plant. The major unsaturated fatty acids in soybean oil are alpha-linolenic acid (7-10%), linoleic acid (51%), and oleic acid (23%). It also contains stearic acid (4%) and palmitic acid (10%). Soybean oil was often reported as an adulterant in expensive edible oil. To date, a specific legal regulation regarding oil adulteration by refined oil has not explicitly mentioned. However, Codex Alimentarius Comission has developed various methods of analysis to prevent the oil adulteration in recent years.

In this project, the comprehensive information about the characteristic of soybean oil were investigated and presented on the following analyses.
